Thailand

Authentic Boutique Hotel

Friendly and fun-loving, cultured and historic, Thailand radiates a golden hue, from its glittering temples and tropical beaches through to the ever-comforting Thai smile.Adored around the world, Thai cuisine expresses fundamental aspects of Thai culture: it is generous, warm, refreshing and relaxed. Thai dishes rely on fresh, local ingredients – pungent lemongrass, searing chillies and plump seafood. A varied national menu is built around the four fundamental flavours: spicy, sweet, salty and sour. Roving appetites go on eating tours of Bangkok noodle shacks, seafood pavilions in Phuket, and Burmese market stalls in Mae Sot. Cooking classes reveal the simplicity behind the seemingly complicated dishes, and mastering the market is an important survival skill. In between the cluttered cities and towns is the rural heartland, which is a mix of rice paddies, tropical forests and squat villages tied to the agricultural clock. In the north, the forests and fields bump up against toothy blue mountains decorated with silvery waterfalls. In the south, scraggy limestone cliffs poke out of the cultivated landscape like prehistoric skyscrapers.

The usually arid northeast emits an emerald hue during the rainy season when tender green rice shoots carpet the landscape. The celestial world is a close confidant in this Buddhist nation, and religious devotion is colourful and ubiquitous. Gleaming temples and golden Buddhas frame both the rural and the modern landscape. Ancient banyan trees are ceremoniously wrapped in sacred cloth to honour the resident spirits, fortune-bringing shrines decorate humble homes as well as monumental malls, while garland-festooned dashboards ward off traffic accidents. Visitors can join the conversation through meditation retreats in Chiang Mai, religious festivals in northeastern Thailand, underground cave shrines in Kanchanaburi and Phetchaburi, and hilltop temples in northern Thailand. With a long coastline (actually, two coastlines) and jungle-topped islands anchored in azure waters, Thailand is a tropical getaway for the hedonist and the hermit, the prince and the pauper. This paradise offers a varied menu: playing in the gentle surf of Ko Lipe, diving with whale sharks off Ko Tao, scaling the sea cliffs of Krabi, kiteboarding in Hua Hin, partying on Ko Phi-Phi, recuperating at a health resort on Ko Samui and feasting on the beach wherever sand meets sea.

Costa Rica

Authentic Boutique Hotel

Centering yourself on a surfboard or yoga mat, descending into bat-filled caves or ascending misty volcanic peaks, hiking, biking or ziplining – your only limit is your return date.If marketing experts could draw up an ideal destination, Costa Rica might be it. The ‘rich coast’ has earned its name and stands apart from its Central American neighbors on the cutting edge of so many trends: surfing, farm-to-table restaurants, and sustainable tourism. Developing infrastructure is balanced by green energy such as wind and hydro. One of the world’s most biodiverse countries, with half a million species – from insects to the giant anteaters that devour them – it also protects one-quarter of its wild lands through law. Rainforest hikes and brisk high-altitude trails, rushing white-water rapids and warm-water, world-class surfing: Costa Rica offers a dizzying suite of outdoor adventures in every shape and size – from the squeal-inducing rush of a canopy zipline to a sun-dazed afternoon at the beach. National parks allow visitors to glimpse life in both rainforest and cloud forest, simmering volcanoes offer otherworldly vistas, and reliable surf breaks are suited to beginners and experts alike.

Can’t decide? Don’t worry: given the country’s size, you can plan a relatively short trip that includes it all.
A recent study showed that many Costa Ricans live longer, healthier lives than people on the rest of the planet, and it all comes down to pura vida (pure life), a term you’ll hear everywhere. Before you dismiss it as marketing banter (and it is a big marketing phrase), listen to how it’s used. It means hello, goodbye, everything’s cool, same to you. It never has a negative connotation. You may enter the country not believing it, but after a week you’ll be saying it, too, unconsciously: pura vida, mae. Relax and enjoy the ride.

Tunisia

Destinations

It may be but a slim wedge of North Africa’s vast horizontal expanse, but Tunisia has enough history and diverse natural beauty to pack a country many times its size.

With a balmy, sand-fringed Mediterranean coast, scented with jasmine and sea breezes, and where the fish on your plate is always fresh, Tunisia is prime territory for a straightforward sun-sand-and-sea holiday.

But beyond the beaches, it’s a thrilling, underrated destination where distinct cultures and incredible extremes of landscape – forested coastlines, Saharan sand seas in the south – can be explored in just a few days.

Dominican Republic

Destinations

The Dominican Republic is one of the Caribbean’s most geographically diverse countries, with stunning mountain scenery, desert scrublands, evocative colonial architecture and beaches galore. Hundreds of kilometers of coastline define the Dominican Republic (DR) – some of it white-sand beaches shaded by rows of palm trees, other parts lined dramatically with rocky cliffs, wind-swept dunes or serene mangrove lagoons. Whether it’s fishing villages with boats moored along the shores, or indulgent tourist playgrounds with aquamarine waters, the sea is the common denominator. Some of the bays and coves where pirates once roamed are the temporary home of thousands of migrating humpback whales, and form part of an extensive network of parks and preserves safeguarding the country’s natural heritage. The country’s roller-coaster past is writ large in the physical design of its towns and cities. Santo Domingo’s Zona Colonial exudes romance with its beautifully restored monasteries and cobblestone streets along which conquistadors once roamed.

The crumbling gingerbread homes of Puerto Plata and Santiago remain from more prosperous eras, and scars from decades of misrule are marked by monuments where today people gather to celebrate. New communities have arisen only a few kilometers from the ruins where Christopher Columbus strode and where the indigenous Taíno people left traces of their presence carved onto rock walls.

Cuba

Destinations

Timeworn but magnificent, dilapidated but dignified, fun yet maddeningly frustrating – Cuba is a country of indefinable magic. Cuba is like a prince in a poor man’s coat: behind the sometimes shabby facades, gold dust lingers. It’s these rich dichotomies that make travel here the exciting, exhilarating roller-coaster ride it is. Trapped in a time warp and reeling from an economic embargo that has grated for more than half a century, this is a country where you can wave goodbye to everyday assumptions and expect the unexpected. If Cuba were a book, it would be James Joyce’s Ulysses: layered, hard to grasp, frequently misunderstood, but – above all – a classic. Bereft of modern interference, Cuba’s colonial cities haven’t changed much since musket-toting pirates stalked the Caribbean. The atmosphere and architecture is particularly stirring in Havana, Trinidad, Remedios and Camagüey where grandiose squares and cobbled streets tell erstwhile tales of opulence and intrigue. Yet, despite pockets of preservation, many buildings still lie ruined like aging dowagers waiting for a face-lift.

With more funds, these heirlooms may yet rise again. Indeed, thanks to private investment, many of them have already been partially renovated, morphing into spectacular private homestays or retro-themed restaurants proudly showing off their weighty historical heritage. The vast majority of Cuba’s tourists gravitate to the attractive arcs of white sand that pepper the country’s north coast and offshore islands. But, explore beyond the beaches and you’re in a different domain, a land of fecund forests and crocodile-infested swamps, abandoned coffee plantations and rugged mountains as famous for their revolutionary folklore as their endemic species. Cuba, once observed German scientist Alexander von Humboldt, is a kind of Caribbean Galápagos where contradictory curiosities exist side by side. Get off the beaten path and seek them out.

Spain’s diverse landscapes stir the soul. The Pyrenees and the Picos de Europa are as beautiful as any mountain range on the continent, while the snowcapped Sierra Nevada rises up improbably from the sun-baked plains of Andalucía; these are hiking destinations of the highest order. The wildly beautiful cliffs of Spain’s Atlantic northwest are offset by the charming coves of the Mediterranean. And everywhere you go, villages of timeless beauty perch on hilltops, huddle in valleys and cling to coastal outcrops as tiny but resilient outposts of Old Spain. That’s where the country’s charms are most likely to take hold.Windswept Roman ruins, cathedrals of rare power and incomparable jewels of Islamic architecture speak of a country where the great civilisations of history have risen, fallen and left behind their indelible mark. More recently, what other country could produce such rebellious and relentlessly creative spirits as Salvador Dalí, Pablo Picasso and Antoni Gaudí and place them front and centre in public life? And here, grand monuments of history coexist alongside architectural creations of such daring that it becomes clear Spain’s future will be every bit as original as its past.
